The New Mexico Public Education Department's Team Nutrition Grant Request for Proposals AD Notice SUMMARY The New Mexico Public Education Department/Student Nutrition Bureau, requests a prospective contractor(s) who will develop and implement a program in conjunction with Santa Fe Public School District and the Santa Fe Indian School. The PED has determined that the delivery of services will begin after June 1, 2009 to date specified in the RFP. The purpose of this Request for Proposal (RFP) is to select a contractor(s) who will: 1. Train kitchen managers to learn how to prepare meals that adhere to the 2005 Dietary Guidelines for Americans and USDA National School Lunch Program requirements. 2. Conduct bi-weekly one hour training sessions for Santa Fe Public School and Santa Fe Indian School kitchen managers at their respective locations. 3. Develop new recipes that conform to the state and federal nutritional guidelines and ensure the cost per meal for school lunch and breakfast meals are fully reimbursable. 4. Select a group of children to test the newly developed recipes to ensure they are healthy and appeal to students. 5. Generate standardized recipes in the USDA format and produce home versions. 6. Collaborate with the NM Student Nutrition Bureau to conduct regional trainings to be held in the Gallup, Las Cruces and Albuquerque areas. 7. Conduct workshops at state and regional school nutrition conferences focusing on healthy cooking practices and the preparation of newly developed recipes. 8. Promote good nutrition by focusing on increasing the amount and variety of whole grains, increased fruit and vegetables, and decreased sodium, saturated fats, Trans fats and total fats. 9. Work with the NM Commodities Bureau to enhance the flexibility of commodity foods available to help reach project goals. 10. The Culinary Specialist will work with the Santa Fe Public Schools staff to prepare a video taping for the National Food Service Management Institutes "Cook for Kids" program. The focus will be on preparing healthy and student-friendly southwest meals. 11. Collaborate with the NM Student Nutrition Bureau to produce a booklet of the newly developed recipes in USDA format. Each school district will receive a complementary copy of the recipes. The booklet will also be made available on-line.
